100 TREVOR CULINARY COLLECTION DESSERT DESSERT Ukrainian Chocolate & Wafer Torte (Pischinger) Silverstein Family Archie '21 and Alaina '26 Alaina and Archie's grandmother (whom they called Baba) emigrated from Ukraine after World War II. This sweet treat was always a family favorite. It takes a tremendous amount of work so was typically made as a special treat for holidays, and for their uncle's birthday since it was his favorite. The chocolate and hazelnut flavors, wedged in thin, crispy wafers, evokes many special memories of spending holidays with Baba before she passed away in 2022. INGREDIENTS 1 package of thin crispy wafers that are approximately 8"- 9" round or square. (These can be found in specialty stores that carry Eastern European products.) 2 sticks of sweet cream butter (aka salted butter) 1–4 ounces bar of semi-sweet baking chocolate 3 whole eggs 2 egg yolks 1 pound box of powdered sugar ½ bottle (approx ½ ounce) of almond extract DIRECTIONS 1. Using a double boiler method, melt the butter first, then add the chocolate in chunks, stir in the eggs (one by one), extract and the powdered sugar and stir constantly until all is incorporated for about 15 minutes. Let cool slightly before spreading between the wafer layers. 2. Spread only enough of the chocolate on the wafer layer to cover it. 3. Repeat the process until you have used up all of the wafers or have run out of chocolate. Do not spread chocolate on the top outside layer. 4. Once all the layers have been assembled, wrap in wax or parchment paper then in aluminum foil. 5. Place in a cool location (not refrigerator) with a heav y book on top for at least one day before cutting. This helps the chocolate permeate the wafers. 6. Cut into thin square slices and enjoy!
