TREVOR CULINARY COLLECTION 89 DESSERT Mima's Mandel Bread Appelbaum Family Benjamin '23 and Russell '26 Mima, who is Russell and Ben's grandma on their dad's side, makes the most delicious Mandel Bread, which is kind of like a Jewish version of biscotti! :) Not too sweet, but still a satisfying crunchy treat. It's a family and friend favorite. Mima makes it for every holiday and even will make a batch to send to her grandkids when they have a special occasion. Enjoy! INGREDIENTS 3 cups all-purpose flour (or you can use matzoh meal) 1 cup oil 1 cup sugar 1 tablespoon baking powder 1 tablespoon vanilla 3 whole eggs 6 ounces chocolate chips ½ cup chopped walnuts (I don't like nuts in my cookies, but Paul loves them!) Cinnamon and sugar mixture DIRECTIONS 1. Cream oil and sugar. 2. Beat in eggs until thick and lemony looking. 3. Add vanilla. 4. Stir in flour and baking powder. 5. Add chocolate chips and nuts. 6. Divide dough in half; grease cookie sheet and make loaf shapes with each half. 7. Bake at 325 degrees about 30 minutes or until lightly browned. 8. Remove from oven and slice while still warm into pieces that look like biscotti. 9. Roll in the cinnamon sugar mixture. 10. Put them back in the oven and leave them until the oven cools; this is the trick to get them extra crunchy.
