TREVOR CULINARY COLLECTION 93 DESSERT Pumpkin Pie Thorson Family Will '36 and Henry '39 This recipe comes from Will's Grandpa Thor. Will has loved it ever since he was a baby! INGREDIENTS 1 pumpkin (Do not use a pumpkin that you've already carved for a Jack-O-Lantern) 3 eggs 1 cup yogurt ½ cup milk 3 tablespoons oil (melted butter, olive, or other) 2 tablespoons molasses 1 / 3 to ½ cup granulated sugar 2 teaspoons ground ginger 1 teaspoon cinnamon Pie crust (can make or buy pre-made) DIRECTIONS 1. Wash, slice, and de-seed the pumpkin. 2. Bake cut slice down in the oven until soft and is caramelized (about an hour at 350 degrees). 3. Scoop the pumpkin and scrape into a large bowl. 4. Mash the pumpkin. 5. Add eggs and stir. 6. Add everything else and stir. The consistency should be fluid, but not stiff somewhat like cake batter. Can add up to an additional ½ cup milk if needed. 7. Pour filling into a pie crust in a pie dish. 8. Bake for 50 to 75 minutes at 375 degrees. 9. Let cool for 10 to 15 minutes before serving. Delicious with vanilla ice cream!
