94 TREVOR CULINARY COLLECTION DESSERT Red Cake Rebecca Lancaster Middle School Mathematics Teacher My family has always made this cake for Christmas. The story goes that my great grandmother asked the Waldorf Astoria for their recipe for their red cake. They sent her the recipe, but also a bill for $100! She was so outraged that she passed the recipe along to everyone she knew so that everyone could enjoy this cake. INGREDIENTS 1 teaspoon baking soda 1 teaspoon white vinegar 1 ½ cup white sugar ½ cup shortening (Crisco) 2 eggs 2 tablespoon cocoa 2 ounce red food coloring 1 teaspoon salt 2 ½ cups cake flour 1 cup buttermilk 1 teaspoon vanilla Frosting: 1 cup regular milk 3 tablespoon flour 1 cup white sugar 1 cup butter 1 tablespoon vanilla extract DIRECTIONS 1. Preheat oven to 350 degrees. 2. Mix vinegar and baking soda in a cup and let set. 3. Cream sugar, shortening, and eggs. 4. Make paste of cocoa and a tablespoon of red food coloring. Add to creamed mixture. Add remainder of red food coloring. 5. Mix salt and flour. Alternate adding buttermilk and salt/flour to mixture. 6. Add vanilla. Then add vinegar/baking soda mixture. Mix well. 7. Pour mixture into two 9" layer cake pans. Bake for 30 minutes or until done. Cool thoroughly. Then cut layers in half horizontally (so you have four thin cake layers). Allow cake to cool completely before you frost. 8. For frosting: Cook milk and flour in double boiler until thick, stirring constantly. Cool completely. 9. Cream sugar and butter until fluffy. Add vanilla. 10. Mix 1 tablespoon of the milk/flour mixture into sugar/butter mixture. Gradually add the rest, one tablespoon at a time. (Taking time with this step allows the sugar granules to dissolve.) Beat at full speed for 2 minutes. 11. Spread frosting between layers and on top (but not on sides).
